Beef Burritos

1 tsp each onion powder, dried oregano, salt 2 tsp each dried cumin powder, paprika 1/4 tsp black pepper 1/4 tsp cayenne pepper, or to taste (optional) 1/2 tbsp olive oil 2 garlic cloves 1/2 onion, finely chopped 500g / 1 lb beef mince (ground beef), lean 2 tbsp tomato paste 3 tbsp water 6 – 8 large soft flour tortillas or round wraps (~25cm/10"+) 3 cups cooked rice, warm not piping hot (white long grain) 3 cups iceberg lettuce or cabbage, finely sliced 1 cup corn kernels (canned, drained) 1 cup black beans (canned, drained) 3 tomatoes, deseeded and diced 1/2 red onion, finely chopped Finely chopped coriander / cilantro (optional) 1 1/2 cups / 150g shredded cheese of choice (melting kind) Steps
Step-by-step
1 Mix the seasoning ingredients together. 2 Heat oil in a skillet over high heat. 3 Add garlic and onion and cook 2 minutes until onion is lightly browned. 4 Add beef and cook, breaking it up, until it turns from red to brown. 5 Stir in the seasoning and cook 1 minute. 6 Add tomato paste and water and cook 3 minutes until the water is mostly evaporated but the beef is still juicy. 7 Set the beef aside to cool for 10 minutes. 8 Warm the tortillas per packet directions if not heating the rolled burritos. 9 Place a tortilla on a work surface and add 1/4 – 1/3 cup rice just below the centre. 10 Top with 1/4 – 1/3 cup beef, then lettuce, corn, black beans, tomato, red onion, coriander and cheese. 11 Fold up the bottom over the filling, fold in the edges, then roll up tightly. 12 Wrap each burrito in foil. 13 Pan fry in a dry pan over medium-high heat a few minutes per side to crisp and warm, or bake in foil at 180C/350F for 20 minutes. 14 Serve with sour cream and chilli sauce, salsa or guacamole. Notes Oven heating: 180C/350F for 20 minutes in foil (about 30 minutes straight from the fridge). Let the beef cool 10 minutes before rolling so the tortilla doesn't go soggy. Use cabbage instead of lettuce if you plan to freeze the burritos; store-bought taco seasoning (1 packet) can replace the homemade blend.
