Buffalo Chicken Wraps

1 Combine the flour, salt and pepper in a shallow bowl. 2 Pour the buttermilk into a second shallow bowl. 3 Dip each chicken breast in buttermilk, then roll in the flour mixture. 4 Heat the oil in a large skillet over medium heat. 5 Cook the chicken 4-5 minutes per side, until a thermometer reads 170°F. 6 Drain the chicken on paper towels, then cut into strips. 7 Stir the hot pepper sauce and melted butter together in a small bowl. 8 Dip the chicken strips in the sauce, coating both sides. 9 Place chicken in the center of each tortilla. 10 Layer with lettuce, cheese and tomatoes. 11 Drizzle with blue cheese dressing. 12 Fold the ends of each tortilla over the filling and secure with toothpicks if desired. Notes Total time is about 25 minutes. Chicken is pan-fried, not deep-fried; cook to 170°F. Any 10-inch flour tortilla works in place of spinach tortillas, and ranch can replace blue cheese dressing. Serve extra dressing alongside for dipping.
