1 Adjust the oven rack to its highest position and preheat the oven to 500°F, or its highest setting. 2 Dissolve the sugar and yeast in the warm water and let sit until foamy, about 5 minutes. 3 Combine 1 cup of the flour and the salt in a large bowl and stir until evenly mixed. 4 Pour the yeast water into the flour and stir with a wooden spoon until fairly smooth. 5 Stir in an additional 1/2 cup flour. 6 Turn the dough onto a floured surface and knead 5 minutes, slowly adding up to 1/2 cup more flour. 7 Let the dough rest 5 minutes. 8 Divide the dough into two equal portions and form each into a ball. 9 Press one ball into a flat disk, then roll into a thin 12-inch circle about 1/8 inch thick. 10 Prepare a pizza pan with non-stick spray, or spray plus cornmeal, and place the dough on it. 11 Spread a thin layer of sauce over the dough. 12 Bake 5 minutes, just until the edges take on a hint of color. 13 Remove from the oven and add the remaining toppings. 14 Bake 7-10 minutes more, until the cheese is bubbly and the crust is medium golden brown. Notes Bake at 500°F (or your oven's highest setting) on the top rack — hotter is better for crisp crust. Par-baking the sauced crust for 5 minutes before topping keeps it crispy. The second dough ball can be wrapped in plastic and refrigerated up to 2 days or frozen up to 3 months. Active dry or instant yeast both work. Roll thin with a rolling pin for cracker-crisp crust.
