1 Position oven racks in the middle and lower third of the oven and preheat to 450 degrees F. 2 Line a baking sheet with aluminum foil. 3 Slice each hot dog lengthwise end to end with a paring knife, cutting only just below the casing. 4 Arrange the hot dogs scored-side up on the foil, spaced apart so heat can circulate. 5 Open the buns and place them cut-side up on a separate baking sheet; set aside. 6 Bake the hot dogs on the middle rack for about 10 minutes. 7 Shake the baking sheet gently to shift the hot dogs slightly. 8 Put the baking sheet of buns on the lower oven rack. 9 Bake about 5 minutes more, until the hot dogs are plump and caramelized with crisp edges and the buns are warm and lightly toasted. 10 Fill the buns with the hot dogs and serve with toppings of choice. Notes Oven at 450°F; total time about 20 minutes with only 5 minutes active. Scoring the hot dogs prevents bursting, promotes even heating and creates a hollow that holds toppings. Foil-lining keeps cleanup easy; buns go in only for the last 5 minutes so they toast without drying out.
