1 Arrange a rack in the middle of the oven and heat the oven to 350°F. 2 Line a rimmed baking sheet with aluminum foil for easy cleanup. 3 Grate 12 ounces cheese on the large holes of a box grater, or measure out 3 cups pre-shredded cheese. 4 Heat 1 tablespoon neutral oil in a large skillet over medium-high heat until shimmering. 5 Add 1 pound lean ground beef and cook, breaking it into crumbles, until browned and cooked through, 6 to 8 minutes. 6 Reduce heat to medium and add the refried beans, taco seasoning, and 1/2 cup water. 7 Stir until combined and warmed through, 1 to 2 minutes, then remove from heat. 8 Arrange half the tortilla chips on the baking sheet in an even layer with some overlap. 9 Dollop half the beef mixture over the chips and sprinkle with half the cheese. 10 Repeat with the remaining chips, beef mixture, and cheese. 11 Bake until the cheese melts and the chip edges turn golden, 3 to 5 minutes. 12 Top with salsa, avocado or guacamole, jalapeños, sour cream, and cilantro, and serve immediately. Notes Oven at 350°F; bake only 3–5 minutes. Ground turkey can replace the beef with no other changes; pre-shredded Mexican-blend cheese works as a shortcut. The beef-and-bean mixture can be made up to 1 day ahead and reheated before assembling. Use sturdy chips, not thin and crispy ones, and serve right away since assembled nachos don't keep.
