1 Pat the pork chops dry. 2 Season both sides with coarse salt and black pepper, rubbing the seasoning into the meat. 3 Heat a skillet over medium-high heat. 4 Add the cooking oil, melted butter, and thyme sprigs. 5 Sear the pork chops about 3 minutes per side, until golden light brown. 6 Add the minced garlic to the skillet. 7 Keep flipping the chops and sauté the garlic until light brown. 8 Add a pinch of salt. 9 Remove the pork from the heat and rest 5-10 minutes. 10 Serve with lemon wedges. Notes Cook to an internal temperature of 145°F (63°C), then rest 5-10 minutes. Bone-in center cut or rib chops about 1 inch thick stay juiciest; pat dry before seasoning for a better sear.
