Shrimp Scampi

1 Thaw the shrimp if frozen by running cool water over them in a colander for a few minutes. 2 Pat the shrimp dry on both sides with paper towels. 3 Season the shrimp with 1/4 tsp salt and 1/4 tsp black pepper; set aside. 4 Heat the olive oil and butter in a large 12-inch skillet over medium heat. 5 Add the minced garlic and sauté for 30 seconds. 6 Add 1/4 tsp salt, 1/4 tsp black pepper, Creole seasoning, and the chicken broth. 7 Whisk together and simmer 2-3 minutes, until reduced by about half. 8 Add the shrimp and cook about 2 minutes on the first side, until pink and opaque. 9 Flip the shrimp, then stir in the parsley, lemon juice, and chili flakes. 10 Cook about 2 minutes on the second side, until pink and opaque. 11 Remove from the heat and toss the shrimp with the sauce. 12 Serve over pasta with extra parsley and lemon. Notes Dry white wine can be substituted for the chicken broth. Use fresh lemon juice — about one medium lemon gives the 2 Tbsp needed. Smaller shrimp cook faster than large, so watch closely to avoid overcooking.
