1 small shallot, roughly chopped 1 jalapeño pepper, seeded and roughly chopped 2 cloves garlic, roughly chopped 1 tomato, seeded and diced 1 avocado, pitted and diced ¾ teaspoon salt 1 tablespoon fresh lime juice, from 1 lime ¼ cup fresh cilantro, coarsely chopped 1½ tablespoons olive oil 1½ teaspoons chili powder ½ teaspoon salt Scant ⅛ teaspoon cayenne pepper 1½ lb large (31 to 35/lb) or extra-large (26 to 30/lb) shrimp, peeled, de-veined, and tail removed, thawed if frozen 8 to 10 (6-in) corn or flour tortillas 2 cups chopped red cabbage, for serving 2 limes, cut into wedges, for serving 1 cup sour cream, for serving Steps
Step-by-step
1 Pulse the shallot, jalapeño, and garlic in a food processor until finely chopped. 2 Transfer to a medium bowl and stir in the tomato, avocado, salt, lime juice, and cilantro; set the salsa aside. 3 In a large bowl, toss the shrimp with the olive oil, chili powder, salt, and cayenne until evenly coated. 4 To grill: heat the grill to medium, grease the grates, and cook the shrimp covered until just opaque, 1½ to 2 minutes per side. 5 To cook indoors: heat a large skillet over medium with a thin film of vegetable oil and cook the shrimp in batches, 1½ to 2 minutes per side, until opaque and pink. 6 Transfer the shrimp to a platter and cover to keep warm. 7 Warm the tortillas on the grill about 20 seconds per side, or heat on the stovetop or in the microwave. 8 Fill each tortilla with a spoonful of avocado salsa, 3 shrimp, and some red cabbage. 9 Serve with lime wedges and sour cream at the table. Notes Fold the salsa gently so the avocado stays chunky; avoid touching the jalapeño seeds and wash hands well. For grilling, use extra-large shrimp or thread them on skewers so they don't fall through the grates. Salsa can be made up to 8 hours ahead with plastic wrap pressed on the surface; shrimp can be seasoned and refrigerated 1 day ahead. Skip the jalapeño and cayenne for a mild version.
