1 Preheat the oven to 400°F. 2 Mash together the softened butter, minced garlic, and dried Italian herbs in a small bowl; set aside. 3 Season the steaks generously on both sides with salt, pepper, and garlic powder. 4 Heat an oven-safe skillet over medium-high heat and drizzle with olive oil. 5 Sear the steaks 2-3 minutes per side until well browned, then transfer to a plate. 6 Add the diced potatoes to the skillet and season generously with salt, pepper, and garlic powder. 7 Sauté the potatoes 3-5 minutes until browned. 8 Push the potatoes to one side of the pan and return the steaks to the other side. 9 Transfer the skillet to the oven and cook 15-20 minutes, until the potatoes are fork-tender and the steaks reach your preferred doneness. 10 Top each steak with a dollop of garlic butter and add the rest to the potatoes right out of the oven. 11 Let the butter melt, then stir the potatoes to coat. 12 Sprinkle with chopped thyme and parsley and serve. Notes Oven at 400°F. Use a 12-inch oven-safe skillet; cast iron gives the best sear. Choose steaks about 4-6 inches long and roughly 1 inch thick — avoid very thin cuts, which overcook in the oven. Most beef cuts work well here.
