Tomato Basil Pasta

Step-by-step
1 Fill a large pot with water and bring to a boil over high heat. 2 Mince the garlic clove. 3 Combine the garlic, olive oil, basil, oregano, salt, rosemary, thyme, crushed red pepper, and black pepper in a skillet. 4 Heat over medium, stirring, until sizzling; cook about 1 minute. 5 Add the tomato paste, reduce heat to medium-low, and cook and stir about 2 minutes until it darkens. 6 Turn off the heat and stir in the honey. 7 Add the spaghetti to the boiling water and cook 7-10 minutes until tender. 8 Reserve about 1/2 cup pasta water, then drain the pasta briefly. 9 Add the pasta to the skillet and stir to coat, loosening with pasta water if dry. 10 Crumble in about 2 oz. feta and stir to combine. 11 Divide onto plates and top each serving with about 1/4 oz. more crumbled feta. Notes A 20-minute weeknight pantry pasta. Dried basil is used here; swap in a handful of torn fresh basil stirred in off the heat for a fresher tomato-basil flavour. Reserve pasta water before draining - the starch loosens the thick tomato paste sauce. Feta can be replaced with grated Parmesan.
